The value of freedom is greater than the value of convenience... true freedom, as in the freedom to wake up when you want and be able to freely choose how you spend your time every day, not just on the weekends or your days off. Once experienced, the value of true freedom is far greater than the value of convenience. Consider for a moment the fact that if you had the freedom to plan your day however your wanted, your life would probable look much differently. What would be convenient for you would also change. Driving 20 minutes to the nearest grocery store would seem very inconvenient if you were also working 40+ hours a week, but if you didn't have to work, 20 minutes away might seem like a good excuse to get out and go do something. Living in an expensive area just because we want to be close to things and near stuff we like to do, means that you will be working more and giving up more of your freedom to afford that lifestyle. Changing your mindset to accept being uncomfortable...

The Taco Stand (Downtown San Diego)

I first heard about the Taco Stand from locals sitting next to me at a bar and it has been one of my favorites ever since. The interior is somewhat small, but packs in as many as possible with additional seating outside. It’s casual and trendy with a well-stocked salsa bar in the back. You can watch your food being prepared with seating directly in front of the grill similar to a sushi bar, while the al pastor roasts in the background. Prices are reasonable considering the quality of the food and everything on the menu is very tasty.
I usually order the Baja fish tacos (battered fish) and Camaron (spicy shrimp) tacos which are 2 of my favorites. The fish is light and flaky with crunchy batter fried to perfection just the right amount of cabbage, tomato, onion and chipotle sauce. The shrimp is firm and fresh, grilled perfectly with avocado slices on the top. For something different they have Nopal (flame grilled cactus) tacos which are a tasty vegetarian option and worth trying even if you aren’t a vegetarian. The Al Pastor is crispy and moist and done on the traditional skewer. On my last visit I ordered the Al Pastor in a burrito, which was huge and filled with meat. The only disclaimer I will make is that there was so much Al Pastor that it was a little overwhelming with all the amazing flavors and richness of the meat and pineapple.
The Taco Stand is a great, casual place to take a date for a quick bite. Make sure to arrive before 9 on weekdays and 10 on the weekend and be prepared to wait as it is usually pretty busy. I highly recommend stopping by if you are ever near one of the multiple locations.
